  • Rosemary-Nectarine Gallette

Make Aunt Lexa’s Dough with some chopped fresh rosemary blended in

Evenly slice fresh nectarines and toss with a squeeze of lemon juice and a few tablespoons of sugar

Lay out crust on a baking sheet, and neatly nestle nectarine slices in center

Fold edges of crust over towards the center, leaving the nectarines exposed

Brush a thin layer of apricot jam on nectarines and crust, and sprinkle with sugar

Bake at 350 until golden

  • Apple Pie

Make Aunt Lexa’s Dough and place in pie dish

Peel and evenly slice a large handful of apples and toss gently but thoroughly with a squeeze of lemon juice, ½ cup sugar, a dash each of cinnamon, cardamom, and coriander, and a few teaspoons of flour to coat

Fill crust and decorate top with more crust if desired.

Bake at 350 til bubbling and crust is golden

Combine 1 cup white flour with 1 stick of frozen, grated butter with a pastry blender or two butter knives until it resembles a coarse meal

Add ice water until dough just sticks together. Combine with a fork and mix until just combined. The key is to not let things warm up too much

Roll out on a clean, dry surface (marble is great). There may be flakes- that is good

Lightly form in pan and fill- do not pre bake

Fill and bake pie or pastry at 350° until golden and flaky

Variation** Add herbs to the dough, like rosemary or thyme, and fill accordingly
